think about it Thursday...

So today I am thinking about dinner...

I thought that today I would share what I have been doing with ALL of my recipes! About 2 years ago the ladies in my neighborhood started something we call Mother's Lunch. We get together mostly during the summers on Wednesday afternoons and each of us brings a potluck item to share with JUST the moms. Kids are welcome...they just don't get to eat! I have enjoyed some pretty amazing foods at these little gatherings. We decided that we needed a place to swap recipes and things like that. So a few months ago I started typing up all my recipes and putting them onto a blog. This way I would have access to them no matter where I am. There are recipes from other gals as well, so they aren't ALL mine, but most of them are!

So today I am sharing what we are having for dinner tonight! It is called Brown Sugar Chicken, but in my house we call it Candy Chicken! We all LOVE this dish! It is SUPER easy to throw together and makes your house smell yummy all day long!

-6 boneless, skinless breast halves
-1 cup brown sugar
-1/4 cup lemon-lime soda
-2/3 cup vinegar
-3 cloves smashed and chopped garlic
-2 T soy sauce
-1 tsp ground black pepper

The Directions.

Use a 5-6 quart crockpot for this recipe.

Plop the chicken into your crockpot. Cover with the brown sugar, pepper, chopped garlic, and soy sauce. Add the vinegar, and pour in the soda. It will bubble!

Cover and cook on low for 6-9 hours, or on high for 4-5. The chicken is done when it is cooked through and has reached desired consistency. The longer you cook it, the more tender it will be.

We like it SO much that I have starting stocking Sprite and garlic cloves at all times. I buy the little fun size cans of soda since you only use 1/4 of a cup in the recipe!

Also I thought I would share one of the things in my pantry that I just LOVE! I love the modular mates from Tupperware! They are the PERFECT size for all of my baking needs. The large ones hold around 25 cups of flour and sugar. I used a rub on alphabet to put my labels on! Seriously these little containers make baking so FUN!

What are you cooking for dinner tonight?

Think about it...

  4. I usually serve it with cous cous and a veggie! If you have never tried cous cous you totally should. It is ready in 5 minutes and my kids love it better than rice even!

  5. Yum, I bet it'd be good with rice, too. It's snowy here today, so we're having chicken tortilla soup. Second soup day in a row...homemade pizza tomorrow. Mmmm.

  7. Heather, this looks so yummy! I wanted to make it yesterday, but I didn't have any soda on hand, so I just used frozen limeade concentrate. Probably not the same effect, but the kids really loved it!

  8. The best part about this recipe is that I usually put my chicken in frozen. If you plan on cooking it on low all day it doesn't matter if the chicken is thawed or not. If you are cooking on high I would thaw the meat first!
